This stunning blossom belongs to the butterfly pea, a plant with a long history of use throughout Asia for its calming properties and high level of antioxidants, namely proanthocyanidin which promotes collagen growth and skin cell elasticity.
When steeped in hot water, the flower imparts a brilliant blue hue to the brew which can be adjusted to violet or pale pink with changes to the pH from lemon or other additives. Enjoyed alone it has a mild taste and grassy/earthy aroma; traditionally served with lemon + honey hot or cold as an iced tea.

Butterfly Pea flower Tea
+ For use as a colourant add 2-3 blossoms per cup.
+ As a therapeutic tea, add 1 teaspoon per 200ml. Brew with boiling water for 3-5 minutes. Serve with lemon + honey.
